Variety: 100% Pinot Noir harvested from Borthwick Vineyard. Viticulture: This is the fourth harvest of Pinot Noir from the vineyard. With new clones of Pinot Noir yielding this year, more Pinot Noir vines planted for harvest in 2005 a busy and rewarding season in the vineyard. A cool spring, warmish summer and dry, disease free ripening period produced grapes of good flavor and tannin. The various sites of Pinot in the vineyard were hand picked at optimum ripeness. Specifications: Alcohol: 14.2% pH:3.60 TA: 5.5g/l Residual sugar: Dry Locality: Dakins Road Winemaking: Hand picked and fermented in 3 ton open top fermenters. A variety of yeasts, both natural and cultured were used with warm fermentation and regular hand plunging before pressing to barrel. The wine was aged in French oak barriques for 10 months. No fining and minimal filtration occurred before bottling. Tasting Notes: Traditional Burgundian techniques and minimal intervention has produced a Pinot Noir with an intense bouquet of cherries and plums. Lovely fine tannins support the rich silky palate. Pure red fruit flavors with beautiful integration of oak portray the emerging characteristics of the vineyard. This wine displays the poetic characteristics of the fickle and gratifying variety Pinot Noir. (available in the UK & Germany only) |
