Variety: 100% Pinot Noir harvested from Borthwick Vineyard. Viticulture: This is the third harvest of Pinot Noir from the vineyard. There were some frosty spring mornings, a summer that flaunted heat and sunshine, and a ripening period of cool nights and warm days. After attentive pampering from bud burst a combination of 8 clones from various sites and soils in the vineyard were hand picked. Specifications: Alcohol: 13.0% pH:3.60 TA: 5.7g/l Residual sugar: Dry Locality: Borthwick Vineyard Winemaking: Hand picked and fermented in 3 ton open top fermenters. A variety of yeasts, both natural and cultured, warm fermentation with hand plunging followed by extended post ferment maceration on skins before pressing to barrel. The wine was aged in barrel for 10 months. No fining and minimal filtration occurred before bottling. Tasting Notes: Traditional Burgundian techniques and minimal handling has produced a Pinot Noir with an intense bouquet of cherries and plums. A rich silky palate with a purity of fruit and lovely fine tannin structure. This wine displays the poetic characteristics of the fickle and gratifying variety Pinot Noir. |
