Variety: 100% Pinot Noir harvested from the Estate vineyard Viticulture: The fifth harvest of Pinot Noir from the vineyard. Combining 6 clones of Pinot Noir grown on vertical shoot positioned trellis from the stoniest part of the vineyard. The reflected light off the stones under the vines and the cool nights enhance the ripening and development of the bunches. Specifications: Alcohol: 12.5% PH: 3.60 TA:5.0g/l Residual sugar: Dry Locality: Dakins Road Winemaking: Hand picked and fermented in 3 ton open top fermenters. A variety of yeasts, both natural and cultured, a warm fermentation with hand plunging followed by extended post ferment maceration on skins before pressing to barrel. Tasting Notes: The 2003 Pinot Noir has benefited from the traditional Burgundian techniques and minimal handling. The wine displays aromas of ripe cherries and plums with flavors of tobacco and spice, firm tannins and a rich and silky smooth texture. This is a wine that will develop wonderfully with time in the bottle. |
