Variety: 100% Chardonnay harvested from the Estate vineyard Viticulture: A frosty spring creating difficult management conditions in the vineyard. Severe shoot and fruit removal left us with a small but potentially great crop. Hand harvested with ripe flavors and good balance. Specifications: Alcohol:13.5% pH:3.48 T.A: 6.50g/l Residual sugar: Dry Locality: Dakins Road Winemaking: Hand picked, whole bunch pressed and transferred to a combination of French and American oak for fermentation with natural and cultured yeasts. Left on gross lies after a partial malolactic fermentation, the wine was aged for 8 months in oak, racked, minimally filtered and bottled. Tasting Notes: The 2003 Chardonnay shows aromas of stone fruit with a long lingering finish, leaving a wealth of flavors on the palate. Restrained and elegant and opens up nicely showing excellent balance and concentration of flavors. |
