Variety: 100% Chardonnay harvested from Borthwick Vineyard Viticulture: Grown on vertical shoot positioned trellis in a mixture of stony shingle and clay loam soils providing different characteristics and flavours. Minimal use of sprays and some labour intensive attention to detail from the hand leaf plucking to the picking has produced fruit of fantastic quality from a superb growing season Specifications: Alcohol: 14.0% PH: 3.55 T.A.: 7.22/l Residual sugar: Dry Locality: Borthwick Vineyard Winemaking: Hand picked, whole bunch pressed and transferred to a combination of French and American oak for fermentation with natural and cultured yeasts. Minimal malolactic fermentation, barrel stirring and aging on yeast lees before being racked, filtered and bottled in February. Tasting Notes: Superb ripe fruit aromas of nectarines and pineapple combined with integrated oak and rich, creamy, nutty characters on the palate. This wine shows depth of fruit and great palate weight that is enjoyable now and in the ensuing years. |
